The evaluation of sensory characteristics is carried out by 12 tasters authorized by the National Office of Vine and Wine (7 from the Testing Laboratory and 5 from the Certification Body). In 2018, 10063 samples of wine, alcoholic and non-alcoholic beverages were tested for the purpose of sensory evaluation. The authorized tasters also participate in tastings of wine products with protected geographical indication (PGI) and protected designation of origin (PDO) organized by the National Office of Vine and Wine.

Alcohol analyzers with electronic densimeters are used to determine the alcohol concentration, density and relative density of wine products, alcoholic and non-alcoholic beverages, soft drinks, beers and beer-based beverages, rectified ethyl alcohol, distillates of agricultural origin and raw materials for their manufacture. The mentioned equipments have a wide working range (0 ÷ 90% vol.) for determination of alcohol concentration with high accuracy (resolution 0.01% vol.) without prior distillation of the samples. The electronic densimeter has an accuracy of six decimal places (0.000001 g/mL) and is considered the most accurate digital densimeter in the world. In 2018, 11184 relevant tests were performed.

Spectrophotometric analyzer for the determination of wine characteristics is used to determine „glucose and fructose” in wines destined for export into the EU. The analyzer can be used for testing other foods, juices and non-alcoholic beverages for the purpose of determining glucose and or fructose concentrations, as well as other characteristics of wine products.
